*3 whole kohlrabi
*1-2 tbsp. olive oil
*1/2 tbsp. sea salt
*1/2 tbsp. freshly ground pepper
Preheat oven to 230 degrees celsius (450 degrees Fahrenheit).
Wash and dry kohlrabi. Drizzle olive oil in the bottom of oven-safe dish and sprinkle with salt and pepper. Rub olive oil on each kohlrabi, place in dish and sprinkle each kohlrabi with salt and pepper.
Roast uncovered in oven for 1.5 hours, turning the kohlrabi over halfway through.
Remove from oven, cut in half and sprinkle with your favorite crumbly cheese. I love topping mine with a sheeps milk feta. Enjoy!
