A little balsamic or maple syrup and A LOT of goodness! This is one of my favorite sides for lunch or dinner!
INGREDIENTS:
5 acorn squash, washed and cut into quarters
1 tbsp. olive oil
2 tbsp. balsamic vinegar AND/OR
2 tbsp. organic maple syrup
Salt & pepper, to taste
DIRECTIONS:
Preheat oven to 200C (400F) and line baking tray with parchment paper.
Place squash on tray drizzle with remaining ingredients and place in oven 30-40 min turning halfway through until the squash starts to turn golden brown.
