A super tasty and healthy side to any dish!
*2 whole beets
*Salt & pepper
Preheat the oven to 200 C (400 F) and wrap each beet individually in aluminum foil. Before you close aluminum foil drizzle a little olive oil on top and then wrap tightly
Bake in oven for 1 hour to 1.5 hours depending on size of the beets (smaller 1 hour, very large 1.5 hours).
Let cool and use the aluminum foil to rub off the skin of the beet. Cut into bite size pieces.
Top with lemon juice, parsley, salt & pepper and enjoy!
