*3-4 light or dark green zucchini
*2 tsp. dried thyme
*1 tsp. dried oregano
*1 tbsp. olive oil
*Salt & pepper, to taste
Preheat oven to 220 degrees celsius (425 degrees fahrenheit).
Cut the zucchini into sticks (I usually get 16 sticks from 1 zucchini). Place in a bowl and toss with herbs, olive oil, salt & pepper.
Line a baking sheet with parchment paper and lay the sticks out in an even layer (you may need to make 2 batches).
Bake in the oven about 25 minutes, turning halfway through. Remove when they start to become golden brown.
