Roasted Veggie Tray

A roasted veggie tray is one of the easiest things to make and you can use any vegetable you like or have hanging around. I have provided you the ingredients for this specific veggie tray, but you as long as you have 1 vegetable, 1 tbsp. olive oil and salt & pepper you will succeed!

Roasted Vegetable Tray

INGREDIENTS:

*1/2 head broccoli, cut into small florets

*1 large zucchini, cut into strips

*1 cup mushrooms, cut into quarters

*1 carrot, cut into strips

*1 white, yellow or red onion, cut into quarters and pulled apart

*1 cup cherry tomatoes (not shown in pic)

*1/2 lemon, sliced

*2 tbsp. olive oil

*1 tsp. dried thyme

*Salt & pepper, to taste


DIRECTIONS:

Preheat oven to 200 degrees celsius (400 degrees Fahrenheit).


Place a piece of parchment paper on oven-safe tray or pan. Add all vegetables and toss with olive oil, thyme and salt & pepper. Top with sliced lemons.


Roast in oven for 30-45 minutes turning 1/2 way through. Enjoy!
