Roasted Sweet Potato

One of my go-to healthy carbs, I cube these when I'm adding them to salads or cut them into wedges so they are like fries when I have them with turkey burgers. Easy and tasty, these are a staple in my house during lunch time.


INGREDIENTS:

*2-3 sweet potatoes, cut into cubes or wedges

*1 tsp. salt

*1 tsp. black pepper or red pepper flakes

*1 tbsp. paprika

*2 tbsp. olive oil


DIRECTIONS:

Preheat oven to 220 C (425 F) and line baking tray with parchment paper.


Cut sweet potatoes and mix in a bowl with seasoning and olive oil.


Place on baking tray and roast in oven for 25-35 minutes.
