Roasted Red Peppers
These are so easy to make and you can use them in everything. My fav's include topping my avocado toast with a couple of pieces or adding them to my kale salad.
*Drizzle of olive oil
*Chopped garlic (optional)
Preheat oven to 200 degrees celsius (400 degrees fahrenheit).
Cut peppers in half lengthwise and clean out core and seeds.
Cover baking sheet with parchment paper and place peppers cut-side down. Drizzle peppers with olive oil and rub oil all over each pepper with your hands.
Place in oven for 45-60 minutes until peppers begin to blacken on top.
Remove from oven and immediately place in closed container for 20 minutes or until cool.
Peel skin off of peppers and return to container to sit in their own juices. You can add chopped garlic for more flavor.
