Banana Bread

They say a picture is worth a thousand words...

INGREDIENTS

  • 3-4 ripe bananas, peeled and mashed with a fork

  • 3 eggs OR chia egg (see below)

  • 2.5 cups almond flour

  • 1 tsp. vanilla extract

  • 1/4 cup almond or oat milk

  • 1 tsp. baking soda

  • 1/2 tsp. salt

  • 1/2 cup dark chocolate chips

  • ~6 crushed walnuts

  • 1 tsp. cinnamon (optional)

  • 1 tsp. melted coconut oil


Chia Egg: great substitute to make this bread vegan. The chia makes the bread a bit thicker and nuttier. Combine 1.5 tbsp. chia with 3.5 tbsp. warm water and let sit for 5-10 minutes before adding to batter.


DIRECTIONS

  1. Preheat the oven to 180 C (350F) and line of small baking dish or bread pan with parchment paper. Pour melted coconut oil into pan and coat evenly on the bottom and sides to prevent sticking.

  2. Mash bananas in a bowl with a fork and add all remaining ingredients except chocolate chips walnuts. Combine.

  3. Fold chocolate chips into batter then transfer to baking pan. Sprinkle the top with some chocolate chips and the walnuts.

  4. Bake in oven for 50 minutes to 1 hour, sticking a toothpick inside to see if it's done.

  5. Let cool before slicing.

Top with your favorite nut butter and a drizzle of honey.
