One of my favorites in the winter or on a cold, rainy day, this hot oatmeal is both satisfying and comforting. You can also use the same ingredients and make overnight oats and eat it cold in the morning instead!

INGREDIENTS:
*1/2 cup oats
*1/2 cup coconut milk (I prefer to use the one in the carton)
*1/2 cup water (if cooking on stove)
*1 tbsp. natural peanut butter or almond butter
*1/2 piece fruit of your choice
*1 tsp. cinnamon
DIRECTIONS:
Stovetop: place oat, coconut milk and water in pot over medium heat, stirring constantly until it thickens, about 10 minutes. Top with nut butter, fruit and cinnamon.
Microwave: place oats and coconut milk in bowl, cover with paper towel and cook for 2 minutes. Stir, add some water if needed and place back in microwave for additional 1-2 minutes. Keep an eye on it that it doesn't spill over bowl. Top with nut butter, fruit and cinnamon.
Overnight oats: Place oats and coconut milk in jar or container and stir. Place in fridge overnight and in the morning top with nut butter, fruit and cinnamon.
