Banana Oat Pancakes

This is the perfect breakfast on a Saturday morning. Filling, flavorful and the answer to your cozy comfort food needs, you will go back to these again and again...and again!

INGREDIENTS:

*1 cup oats

*2 ripe bananas

*3/4 cup almond/oat milk

*1 tsp. vanilla extract

*1 1/2 tsp. baking powder

*1 tsp. cinnamon (optional)

*Coconut oil


DIRECTIONS:

In a blender combine all ingredients except coconut oil. Blend for 30-1 minute until creamy. If it's too thick you can add 1-2 tbsp. water.


Heat a pan over medium heat with 1 tsp. coconut oil. Pour pancake mixture into coaster-size rounds and cook until the bottom begins to brown, then flip and cook on the other side. Keep in mind that these will not bubble like regular pancakes so keep an eye on the bottom so it doesn't burn. Add another 1 tsp. coconut oil to pan between batches.


Top with 1/2 cup cottage cheese or 2 tsp. melted dark chocolate.


This makes 2 servings so you can share with your significant other or put half in the fridge for the next day.
