Coconut Chia Pudding

Great for on-the-go breakfasts, satisfying snacks or even after dinner can't go wrong with storing a few chia puddings in the fridge! Chia seeds are an excellent source of fiber, magnesium, calcium and iron, and they're a very versatile product for vegans.


  • 2 tbsp. chia seeds

  • 1/2 cup coconut milk

  • 1 tsp. vanilla extract

  • 1 tsp. cinnamon (optional)

  • Fruit of choice


  1. Combine chia seeds, coconut milk and vanilla extract in a jar and place in fridge overnight.

  2. Top with favorite fruit. I love to top mine off with some frozen grapes!
