Date & Nut Roll

My mother in-law, Michal, started making this for me every week when I kindly asked her not to bake us cakes anymore, and I couldn't be more grateful for it! I don't know if I like this or the chocolate squares more as a sweet fix which is why I generally alternate between the 2 each week. Easy, quick, full of nutrients and the perfect fix when you're craving something sweet or need an energy boost!

INGREDIENTS:

500 grams (1 lbs.) vacuum-packed crushed dates*

4 cups nuts (raw and unsalted of any kind - my faves are pistachios, almonds, walnuts and pecans)

1 tsp. cinnamon

1/2 tsp. ground ginger

2 tbsp. organic date honey or regular honey

3 tbsp. Ground coconut or sesame seeds to top (optional)


DIRECTIONS:

  1. Toast the nuts. Place the nuts in pan over medium heat and continuously move them around until they start to become fragrant and remove from heat. (They can burn easily so be sure to keep a close eye on them and continuously mix them around the pan)

  2. Place the crushed dates in a bowl and pick out any bits of pit that are left in there.

  3. Mix in all remaining ingredients (except the ground coconut/sesame seeds) until well-combined.

  4. Split the date mix into 2 so that you will have 2 rolls. Place on clean counter top or saran wrap and create a roll about the size of your fore-finger to thumb.

  5. Place coconut or sesame seeds on plate and roll each roll until covered.

  6. Wrap the rolls individually in saran wrap and place in freezer for a minimum of 30 minutes before eating.

  7. You can choose to leave them whole and cut rounds as desired or remove from freezer after 30 min., cut into rounds and place pre-cut rounds back in container in freezer.

2 medallions are generally enough for me when I'm craving something sweet, enjoy!

*if you can't find the vacuum packed dates in the store, you can buy pitted dates and place them in a food processor. You need about 2-3 cups of dates.
