Lentil and Beet Burgers



INGREDIENTS

  • 2-3 roasted beets (follow instructions to roast beets) OR vacuum-sealed beets, shredded

  • 1 cup black lentils, cooked

  • 1/2 cup oats

  • 1 small cooked sweet potato, peeled and mashed

  • 1 red onion, peeled and grated

  • 1 clove garlic, peeled and grated

  • 1 tbsp. cumin

  • 1 tsp. paprika

  • 1 tsp. red pepper flakes (optional)

  • Salt & pepper, to taste

  • 1 tbsp. olive oil


  1. Roast the beets and cook the lentils. Place a sweet potato in the microwave for 8 minutes, turning over after 4 minutes. Remove, peel and mash with a fork

  2. In a blender or using a hand blender, blend the oats to create a flour.

  3. In a bowl, mix shredded beets, lentils, oat flour, mashed sweet potato, grated onion and garlic and spices until well-combined.

  4. Heat oven to 190 C (375F) and line a baking tray with parchment paper.

  5. Create burger-size patties and place on tray. Should make 9-12 patties.

  6. Drizzle with olive oil and bake in oven for 30-45 min flipping halfway through.

  7. Top with a drizzle of tahina and a sprinkle of fresh parsley.

*Alternatively, you can keep these raw and cook them ready to eat in a pan!
