Ingredients: -1 bag frozen chickpeas or 1 cup dry chickpeas (soak in bowl with water for 12 hours or overnight) -1 onion, peeled and chopped -3 sweet potatoes, small cubes -3 pieces garlic, chopped -1 thumb ginger, peeled and chopped -2 cups shredded cabbage -1 tomato, chopped -1 piece chile or jalepeno pepper -any other veggies (raw corn that I had and just cut it off the cob) -2 tbsp. curry powder -1 can or container coconut milk -salt & pepper to taste
Instructions:
Saute onion and sweet potato for 5-10 min, add all other veggies mixing regularly.
Add curry powder and coconut milk, close the lid and simmer on low heat for 15 min until sweet potato softens.
Add chickpeas and simmer for another 5-10 min.
