One of my favorites, and most definitely a go-to during a hectic week, this salad is great for everything. When you're in a rush, after a workout, at a dinner party and most definitely when you have absolutely nothing in the house.
INGREDIENTS:
*1 can of chickpeas (drained and rinsed)
*1/2 cup dried cranberries
*1-2 scallions, chopped to your liking
*1/3 cup feta cheese, crumbled
*Super yummy olive oil
*Salt & pepper, to taste
DIRECTIONS:
Throw everything together in a big bowl, top with your favorite olive oil and salt and pepper to taste. I typically use a more flavorful olive oil that I buy in foreign countries and don't usually get to use on a daily basis.
I prefer this salad super fresh, so if I am not preparing it for 3+ people, I prepare single serving dishes like the one above. Enjoy!
