Whole Roasted Eggplant



INGREDIENTS:

*1 whole eggplant, cut in half

*2 cloves garlic, sliced

*2 tbsp. olive oil

*1 tomato, chopped

*Salt & pepper

*Grated parmesan cheese (optional)




DIRECTIONS:

Preheat oven to 200 degrees C.


Cut eggplant in half and score each side of eggplant (cut 3 diagonal lines, and then 3 diagonal lines in opposite direction).


Place garlic slices and chopped tomato into the slits in eggplant, drizzle with olive oil, ,salt & pepper and place in oven for 25-30 minutes. Top with grated parmesan cheese.
