Roasted Zucchini & Red Onion

Packed with flavor, a little spicy and the perfect addition to any lunch or salad.


*2 light or dark green zucchini, cut in half lengthwise and then cut into moon-shaped pieces

*1 red onion, cut into 1/4 wedges

*1 tbsp. dried cumin

*1 tsp. salt

*1 tsp. black pepper or red pepper flakes

*1 tbsp. olive oil


Preheat oven to 200 C (400 F) and line baking tray with parchment paper.

Combine all ingredients in a bowl and mix until well-combined. Place on baking tray and roast in oven or 25-35 minutes.
