*2 tbsp. red lentil flour
*1 tsp. baking powder
*1/4-1/2 cup water
*Salt & pepper
*1 tsp. coconut oil
*Additions: garlic, red onion, tomatoes, mushrooms, spinach
In a bowl, combine red lentil flour, baking powder and water until you reach a tahina like consistency. Add salt & pepper.
In a pan, heat coconut oil and saute any veggies you want in your omelette. My fave combo is garlic, red onion and spinach. Add in red lentil mixture and cover cooking for about 5 minutes, turn and cook for another 5 covered.
