INGREDIENTS:
*1 tbsp. olive or coconut oil
*1 white or yellow onion, chopped
*4 carrots, chopped
*1 cup red lentils
*1 cup oats
*2 cloves garlic, chopped finely
*Chopped parsley
*1 tbsp. paprika
*2 tsp. cumin
*1 tbsp. pumpkin seeds
*1 tbsp. olive oil
*Salt & pepper
DIRECTIONS:
Heat 1 tbsp. olive or coconut oil in pot and add onions, stirring 2-3 minutes until soft. Add in carrots and top with about 2 cups water, cover and bring to boil.
Place 1 cup oats in a separate pot and cover with 2 cups water, cover, bring to boil then cook uncovered for 20-25 minutes.
When carrots are fork-tender, strain carrots and onions and place in bowl. Smash the carrots with a fork. Add the cooked lentils, oats, garlic, parsley, paprika, cumin and pumpkin seeds and combine.
Preheat the oven to 200 C (400 F) and line a baking tray with parchment paper.
Now it's time to make those patties! If the mixture won't hold, then add some more oats as needed. Use a tbsp. and scoop 2 tbsp. of mixture to form 1 patty, flatten it out a little and place on tray. It should make about 12-15 patties.
I like to brush the tops of mine with some olive oil so they stay moist and become golden brown.
Bake in oven for 20-25 minutes.
These can be reheated or eaten cold throughout the week. Enjoy!
