Grilled Chicken or Chickpea Salad


*2 cups shredded cabbage or lettuce

*1 cucumber

*1 carrot

*Leftover veggies (optional)

*2-3 pieces grilled chicken or 1 cup chickpeas

*1/2 roasted sweet potato

*1/2 lemon

*1 tbsp. olive oil

*1 tsp. mustard

*1 tbsp. balsamic vinegar

*1 clove garlic

*Salt & pepper


Shred cabbage or lettuce, cucumbers, carrots, and any leftover roasted vegetables from the week. Cut up the grilled chicken and 1/2 roasted sweet potato and add it to salad. You can use 1 cup chickpeas as an alternative to chicken.

For the dressing: combine 1 tbsp. olive oil, juice of 1/2 lemon, 1 tsp. mustard, 1 tbsp. balsamic vinegar, 1 small clove garlic, salt and pepper.
