We don't eat a lot of red meat, but sometimes we like to take a break from eating chicken and fish. This bolognese is healthy, hearty and a great winter dish!
*1 kg. lean beef
*1 tbsp. olive oil
*1 white or yellow onion, diced
*4 cloves garlic, finely chopped
*2 carrots, diced
*8 button mushrooms, sliced
*2 tbsp. tomato paste
*1 large can, crushed tomatoes
*2 tbsp. paprika
*1 tbsp. dried oregano
*2 tsp. red pepper flakes
*Handful of parsley, chopped
*Salt & pepper, to taste
Heat 1 tbsp. olive oil over medium-high heat, add onions, carrots and garlic, and saute for 5 minutes before adding mushrooms. Continue to cook for another 5 minutes, stirring the vegetables every couple of minutes.
Remove vegetables from the pan, add beef and cook meat until brown. Return vegetable to pan and add tomato paste, paprika, oregano, red pepper flakes, salt & pepper. Stir for 2 minutes until all ingredients are well combine.
Add crushed tomatoes and parsley, cover and simmer for at least 30 minutes, up to 1-1/2 hours.
