4-(Maybe 5)-Ingredient Cookies

Before you start freaking out on me that I’m posting a cookie recipe, just relax and hear me out…

Oat, Banana, Chocolate Chip Cookies

Yea, now I've got your attention... These are probably the healthiest cookies you will ever eat in your life. They’re so healthy, they can be made vegan (alternate chocolate chips for carob chips, dates or raisins) AND they're gluten-free. Sounds gross, right? Maybe. But then… why do they taste so good then??

I promise – these are so delicious, you won’t even notice all the “healthy” spilling out of them.

I adapted this recipe from Ambitious Kitchen (one of my all-time favorite blogs for healthy cooking and baking ideas).


INGREDIENTS: *3 bananas, mashed

*2 cups rolled oats

*1 tsp. vanilla extract

*1/3 cup dark chocolate chips

*Optional: chopped almonds, dried dates, raisins, cinnamon


DIRECTIONS:

Set your oven to 175°C (350°F) and line a baking sheet with parchment paper.

Mash up the bananas. I use my hands :p but, technically... a fork could work.

Place the oats in a food processor or blender and blend until they have a flour-like consistency. Add the oats to the mashed bananas along with the vanilla, and use your hands to combine the ingredients. Fold in the chocolate chips (without eating too many on the side – I’m watching you!).

Oil the baking sheet and place spoonful’s of the dough onto the sheet. Press down on each cookie with a spatula and bake in oven for 10 minutes.

This recipe should make about 16 cookies and each cookie should weigh in at about 60-80 calories (pending the additional ingredients you may add).
