*1 white or yellow onion, chopped
*1 large carrot, chopped
*1 zucchini, chopped
*2 cloves garlic, chopped
*1 cup red lentils
*1 tsp. dried thyme
*2 bay leaves
*3 cups water + 3 cups chicken or vegetable stock
*6 cups water + 2 tbsp. chicken soup mix
*1 tbsp. olive oil
*Salt & pepper, to taste
Saute onion, carrot, zucchini and garlic in 1 tbsp. olive oil for 10 minutes on low heat. Season with salt and pepper.
Add lentils, thyme and bay leaves and saute for another 1 minute. Add water and stock, and season with salt and pepper.
Cover the pot, bring to boil and then reduce heat to simmer for 40 minutes.
Check seasonings adding more thyme, salt, pepper as needed.
