*1 white or yellow onion, chopped
*1 large carrot, chopped
*1 stalk celery, chopped (including leaves)
*2 cloves garlic, chopped
*1 tomato, chopped
*1 cup red lentils
*1 tsp. dried thyme
*1 bay leaf
*3 cups water + 3 cups chicken or vegetable stock
*6 cups water + 2 tbsp. chicken soup mix
*1 tbsp. olive oil
*Salt & pepper, to taste
Saute onion, carrot, celery and garlic in 1 tbsp. olive oil for 10 minutes on low heat. Season with salt and pepper.
Add tomato, lentils, thyme and bay leaf and saute for another 1 minute. Add water and stock, and season with salt and pepper.
Cover the pot, bring to boil and then reduce heat to simmer for 40 minutes to 1 hour.
Check seasonings adding more thyme, salt, pepper as needed.
