*1 piece pumpkin (~200g), cut into large cubes
*1 white or yellow onion, cut into quarters
*2 large carrots, cut into large rounds
*2 light or dark green zucchini, peeled and cut into large rounds
*8 cups water
*Salt & pepper, to taste
Place all ingredients in large pot over high heat. Cover, bring to a boil, then reduce heat to simmer for 2-3 hours.
Remove from heat and puree the soup with immersion blender. Season with salt & pepper as needed. Top with green onion, parsley or cilantro to serve!
