INGREDIENTS:
For the salad (one serving):
*4 tbsp. black beans
*1/2 cup roasted zucchini and red onion (recipe in blog)
*1/2 cup roasted sweet potato (recipe in blog)
*1/2 tomato, chopped
*2 cups lettuce, chopped
*1/2 cob fresh corn (optional)
*1/2 avocado (optional)
For the dressing:
*1 tbsp. red wine vinegar
*1 tbsp. olive oil
*1/2 tsp. paprika
*1/2 tsp. dried oregano
*Salt & pepper
***you can triple this recipe and keep the unused dressing in the fridge to add to salad everyday***
DIRECTIONS:
Combine all ingredients and top with dressing. Enjoy!
