*1 kg chicken cutlets, cut into 1.5 inch pieces
*1.5 tbsp. dried cumin
*1 tsp. dried coriander
*2 cloves garlic, chopped
*1 tbsp. olive oil
*2 tsp. coconut oil
*Salt & pepper, to taste
Mix chicken, cumin, coriander, garlic, olive oil, salt & pepper in a bowl and let marinate in the fridge, covered for at least 30 minutes or overnight.
Heat 2 tsp. coconut oil (or 1 tbsp. olive oil) in pan over medium-high heat.
Saute chicken in pan for about 10 minutes, flipping half-way through. Cut 1 piece in half to make sure the chicken is completely cooked through and remove from heat.
