
INGREDIENTS:
*1 can chickpeas, drained and rinsed
*1 tsp dijon mustard
*1 tsp. light mayonnaise or greek yogurt
*Chopped green onion/parsley/cilantro
*Salt & pepper, to taste
DIRECTIONS:
Lightly smash the chickpeas with a fork and mix in dijon mustard, light mayonnaise/greek yogurt, chopped greens, and salt & pepper.
Place chickpea salad on 2 pieces of toasted rye/whole wheat/sourdough bread with a piece of lettuce or kale and sliced tomatoes for added crunch. Enjoy!
