Chickpea & Parmesan Cheese Salad

I not only love the taste of chickpeas, but I love how easy it is to throw them in a salad when I'm in a rush or don't have much food in the house. I always have canned chickpeas on standby!

Chickpea and Parmesan Cheese Salad


*1/2 can chickpeas, drained and rinsed with water

*2 cups arugula

*5 slices shaved parmesan cheese

*1 tbsp. balsamic vinegar

*1/2 tbsp. olive oil

*Squeeze fresh lemon juice

*Salt & pepper, to taste


Drain and rinse chickpeas. Place all ingredients in a bowl and enjoy!
