INGREDIENTS:
*1 tbsp. olive oil
*1 yellow or white onion, chopped
*3 cloves garlic, peeled and chopped
*1 zucchini, peeled and diced
*1/4 head cauliflower, chopped
*2 tomatoes, chopped
*2 cups kale, chopped
*1 tsp. red pepper flakes
*1 can cannellini beans, drained and rinsed
*1 - 3 inch parmesean cheese rind
*4 cups water + 4 cups chicken or vegetable stock
OR
*8 cups water + 2 tbsp. chicken soup mix
*Salt & pepper, to taste
DIRECTIONS:
Heat olive oil in pot over medium heat and add onion, garlic and zucchini and saute for 3-5 minutes. Add cauliflower tomatoes, kale, red pepper flakes and salt and saute for another 2 minutes.
Add beans, cheese rind and water, bring to a boil and simmer covered for 30 minutes up to 2 hours. Remove cheese rind from soup.
