Chicken Soup

As most of you know, I LOVE soup! And in the winter (even though its hot 85% of the time in Tel Aviv) I make a different soup every week. My grandma made the best chicken soup...as I'm sure your grandma did...and passed the recipe on to my mom who somehow has made it taste even better! The secret (in my opinion) is turnips! I hope you enjoy this as much as I do!


*This recipe can also be used to make a bomb veggie soup, just leave out the chicken!*

Chicken Soup

INGREDIENTS:

*1 whole chicken, cut into pieces (about 2kg)

*1 white or yellow onion, cut into quarters

*1 large carrot, diced

*3 celery stalks, diced INCLUDING the celery leaves

*1 turnip, peeled and diced

*1 large parsnip, peeled and diced

*8-10 cups water

*Salt & pepper, to taste


DIRECTIONS:

Place all ingredients in large pot. Cover with water, until 1 inch before the rim.


Bring to a boil, reduce to simmer, and simmer on med-low heat for 1-1/2 to 3 hours, stirring occasionally.


Remove chicken from pot and shred the chicken off the bones. You can either add the chicken back into the pot or save it on the side to make chicken salad (another one of my favs).


Leave the soup in the fridge overnight and in the morning you will need to skim the chicken fat off the top of the soup before eating.
